Brown Butter Mashed Sweet Potatoes

Ingredients

  • 3 medium sweet potatoes
  • 1 heaping tablespoon butter
  • Salt and pepper to taste
  • Milk as needed
  • Additional butter for browning

Method

  1. 1 Boil sweet potatoes until tender. Peel and mash through a strainer.
  2. 2 Mix in butter, salt, pepper, and enough milk to make the mixture very soft.
  3. 3 Place in a baking dish, dot with small bits of butter, and bake until browned.
  4. 4 Serve in the baking dish. For leftovers, form into flat cakes and pan-fry in butter until browned on both sides.
