Brown Butter Mashed Sweet Potatoes
Ingredients
- 3 medium sweet potatoes
- 1 heaping tablespoon butter
- Salt and pepper to taste
- Milk as needed
- Additional butter for browning
Method
- 1 Boil sweet potatoes until tender. Peel and mash through a strainer.
- 2 Mix in butter, salt, pepper, and enough milk to make the mixture very soft.
- 3 Place in a baking dish, dot with small bits of butter, and bake until browned.
- 4 Serve in the baking dish. For leftovers, form into flat cakes and pan-fry in butter until browned on both sides.
