Brown Butter Mashed Potatoes

Ingredients

  • potatoes
  • 1 tsp salt
  • butter
  • milk or cream
  • pepper
  • celery salt (optional)

Method

  1. 1 Peel potatoes and soak in cold water for an hour. Drain and cover with fresh cold water, adding 1 tsp salt.
  2. 2 Boil potatoes until tender. Drain and push through a potato ricer into a bowl.
  3. 3 Season with butter, a little milk or cream, pepper, and salt to taste. Add celery salt if desired. Beat thoroughly.
  4. 4 Transfer to a serving dish. Score the top into squares with a knife, pour melted butter over, and brown in the oven.
