Brown Butter Mashed Potatoes
Ingredients
- potatoes
- 1 tsp salt
- butter
- milk or cream
- pepper
- celery salt (optional)
Method
- 1 Peel potatoes and soak in cold water for an hour. Drain and cover with fresh cold water, adding 1 tsp salt.
- 2 Boil potatoes until tender. Drain and push through a potato ricer into a bowl.
- 3 Season with butter, a little milk or cream, pepper, and salt to taste. Add celery salt if desired. Beat thoroughly.
- 4 Transfer to a serving dish. Score the top into squares with a knife, pour melted butter over, and brown in the oven.
