Brown Butter Kale With Onion
Ingredients
- 1 bunch curly kale
- 1 onion, chopped
- 1 tablespoon butter
- 1 tablespoon whole wheat flour
- Salt and pepper to taste
Method
- 1 Wash the kale, remove coarse stalks, and boil in a small amount of water with the chopped onion for 1.5 to 2 hours until soft.
- 2 Drain the kale, reserving some liquid, and chop it finely.
- 3 Melt butter in a saucepan, stir in the wheatmeal, and brown slightly.
- 4 Add a little reserved liquid to make a smooth paste, then return the chopped kale.
- 5 Season with salt and pepper, cook for one minute, and serve.
