Brown Butter Kale With Onion

Ingredients

  • 1 bunch curly kale
  • 1 onion, chopped
  • 1 tablespoon butter
  • 1 tablespoon whole wheat flour
  • Salt and pepper to taste

Method

  1. 1 Wash the kale, remove coarse stalks, and boil in a small amount of water with the chopped onion for 1.5 to 2 hours until soft.
  2. 2 Drain the kale, reserving some liquid, and chop it finely.
  3. 3 Melt butter in a saucepan, stir in the wheatmeal, and brown slightly.
  4. 4 Add a little reserved liquid to make a smooth paste, then return the chopped kale.
  5. 5 Season with salt and pepper, cook for one minute, and serve.
