Brown Butter Green Beans and Zucchini
Ingredients
- 1 lb green beans, parboiled
- 1 medium zucchini, cubed
- 2 tbsp butter
- Salt to taste
- 2 tbsp brown stock or tomato sauce
Method
- 1 Parboil the green beans until half-cooked, then drain well.
- 2 Melt butter in a skillet over medium heat. Add the green beans and sauté until lightly browned.
- 3 When the butter begins to brown, add the cubed zucchini. Cook until tender.
- 4 Season with salt and stir in the brown stock or tomato sauce. Serve immediately.
