Brown Butter Green Beans and Zucchini

Ingredients

  • 1 lb green beans, parboiled
  • 1 medium zucchini, cubed
  • 2 tbsp butter
  • Salt to taste
  • 2 tbsp brown stock or tomato sauce

Method

  1. 1 Parboil the green beans until half-cooked, then drain well.
  2. 2 Melt butter in a skillet over medium heat. Add the green beans and sauté until lightly browned.
  3. 3 When the butter begins to brown, add the cubed zucchini. Cook until tender.
  4. 4 Season with salt and stir in the brown stock or tomato sauce. Serve immediately.
