Brown Butter Fish Sauce With Lemon

Ingredients

  • 1 tsp flour
  • 2 oz butter
  • 1 cup fish broth
  • 2 tbsp olive oil
  • 1 egg yolk
  • Juice of ½ lemon
  • Salt and pepper to taste
  • Parsley sprig for garnish

Method

  1. 1 Melt butter and flour in a saucepan over heat until the flour begins to brown.
  2. 2 Gradually whisk in the fish broth until smooth and thickened.
  3. 3 Remove from heat and stir in olive oil and egg yolk until well combined.
  4. 4 Add lemon juice, salt, and pepper. Let cool slightly before pouring over boiled fish.
