Brown Butter Fish Sauce With Lemon
Ingredients
- 1 tsp flour
- 2 oz butter
- 1 cup fish broth
- 2 tbsp olive oil
- 1 egg yolk
- Juice of ½ lemon
- Salt and pepper to taste
- Parsley sprig for garnish
Method
- 1 Melt butter and flour in a saucepan over heat until the flour begins to brown.
- 2 Gradually whisk in the fish broth until smooth and thickened.
- 3 Remove from heat and stir in olive oil and egg yolk until well combined.
- 4 Add lemon juice, salt, and pepper. Let cool slightly before pouring over boiled fish.
