Brown Butter Cod With Oysters And Capers
Ingredients
- 1 lb cod fillet
- 1 quart water
- 1 tbsp vinegar
- 1 bay leaf
- 1 lemon, sliced
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp butter
- 2 tbsp flour
- 2 tbsp capers
- 4 oysters
- 1 tbsp lemon juice
Method
- 1 Wash cod and place in a pot with water, vinegar, salt, pepper, bay leaf, and lemon slices. Bring to a boil and cook until flaky.
- 2 In a separate pan, melt butter and brown it slightly. Stir in flour to make a roux, then add capers and oysters. Cook until heated through.
- 3 Drain the cod and plate it. Pour the sauce over the fish and garnish with fresh black pepper and lemon juice.
