Brown Butter Cod With Oysters And Capers

Ingredients

  • 1 lb cod fillet
  • 1 quart water
  • 1 tbsp vinegar
  • 1 bay leaf
  • 1 lemon, sliced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 tbsp capers
  • 4 oysters
  • 1 tbsp lemon juice

Method

  1. 1 Wash cod and place in a pot with water, vinegar, salt, pepper, bay leaf, and lemon slices. Bring to a boil and cook until flaky.
  2. 2 In a separate pan, melt butter and brown it slightly. Stir in flour to make a roux, then add capers and oysters. Cook until heated through.
  3. 3 Drain the cod and plate it. Pour the sauce over the fish and garnish with fresh black pepper and lemon juice.
