Brown Butter Clam Sauce On Toast
Ingredients
- 2 strings soft shell clams
- 1 large tablespoon butter
- 1 heaping tablespoon butter
- 1 cup milk
- Salt and pepper to taste
- Toast for serving
Method
- 1 Wash and finely chop the soft shell clams.
- 2 Melt 1 tablespoon butter in a frying pan over medium heat.
- 3 Add clams and stir frequently until nicely browned, keeping them broken up with a spoon.
- 4 Add the second tablespoon of butter, stirring until absorbed and browned.
- 5 Gradually stir in milk until smooth and thickened.
- 6 Season with salt and pepper, simmer for 5 minutes, and serve on toast.
