  • 2 strings soft shell clams
  • 1 large tablespoon butter
  • 1 heaping tablespoon butter
  • 1 cup milk
  • Salt and pepper to taste
  • Toast for serving

Method

  1. 1 Wash and finely chop the soft shell clams.
  2. 2 Melt 1 tablespoon butter in a frying pan over medium heat.
  3. 3 Add clams and stir frequently until nicely browned, keeping them broken up with a spoon.
  4. 4 Add the second tablespoon of butter, stirring until absorbed and browned.
  5. 5 Gradually stir in milk until smooth and thickened.
  6. 6 Season with salt and pepper, simmer for 5 minutes, and serve on toast.
