Brown Butter Chicken Cutlets

Ingredients

  • 1 young chicken, cut into 6 pieces
  • 1 egg
  • 1 tsp water
  • flour for dredging
  • salt and pepper
  • bread crumbs
  • butter

Method

  1. 1 Cut the chicken into six pieces and remove some bones. Season generously with salt and pepper.
  2. 2 Beat the egg with water. Dredge chicken pieces in flour, then dip them in the egg mixture.
  3. 3 Coat the egg-dipped chicken pieces in bread crumbs.
  4. 4 Melt butter in a saucepan over medium-high heat until it begins to brown.
  5. 5 Place chicken pieces skin-side down in the pan. Cook for about 10 minutes, turning once when browned.
  6. 6 Serve hot with lemon, or cold.
