Brown Butter Chicken Cutlets
Ingredients
- 1 young chicken, cut into 6 pieces
- 1 egg
- 1 tsp water
- flour for dredging
- salt and pepper
- bread crumbs
- butter
Method
- 1 Cut the chicken into six pieces and remove some bones. Season generously with salt and pepper.
- 2 Beat the egg with water. Dredge chicken pieces in flour, then dip them in the egg mixture.
- 3 Coat the egg-dipped chicken pieces in bread crumbs.
- 4 Melt butter in a saucepan over medium-high heat until it begins to brown.
- 5 Place chicken pieces skin-side down in the pan. Cook for about 10 minutes, turning once when browned.
- 6 Serve hot with lemon, or cold.
