Brown Butter Celery

Ingredients

  • 2 heads celery per person
  • butter
  • hot stock (soup stock or chicken broth)
  • brown stock (optional)
  • salt
  • pepper

Method

  1. 1 Clean and trim celery, removing hard sprigs and leaves. Trim the stem.
  2. 2 Wash repeatedly in running water, drain, and boil in salted water until cooked. Drain again.
  3. 3 Melt butter in a saucepan and brown the celery, turning often for 10 minutes.
  4. 4 Pour hot stock over the celery, cover, and parboil for a few moments.
  5. 5 Season with brown stock if available, otherwise with salt and pepper. Serve immediately.
