Brown Butter Celery
Ingredients
- 2 heads celery per person
- butter
- hot stock (soup stock or chicken broth)
- brown stock (optional)
- salt
- pepper
Method
- 1 Clean and trim celery, removing hard sprigs and leaves. Trim the stem.
- 2 Wash repeatedly in running water, drain, and boil in salted water until cooked. Drain again.
- 3 Melt butter in a saucepan and brown the celery, turning often for 10 minutes.
- 4 Pour hot stock over the celery, cover, and parboil for a few moments.
- 5 Season with brown stock if available, otherwise with salt and pepper. Serve immediately.
