Brown Butter Celery Stew
Ingredients
- celery, cut into 1-inch lengths
- cold water
- stock
- salt
- paprika
- 1 tsp grated onion
- flour
- butter
Method
- 1 Clean and cut celery into 1-inch lengths. Cover with cold water and soak for 1 hour. Drain.
- 2 Cook celery in stock to cover with salt, paprika, and 1 tsp grated onion until tender.
- 3 Brown flour in butter. Thicken the cooking liquid with the browned butter-flour mixture and serve.
