Brown Butter Celery Stew

Ingredients

  • celery, cut into 1-inch lengths
  • cold water
  • stock
  • salt
  • paprika
  • 1 tsp grated onion
  • flour
  • butter

Method

  1. 1 Clean and cut celery into 1-inch lengths. Cover with cold water and soak for 1 hour. Drain.
  2. 2 Cook celery in stock to cover with salt, paprika, and 1 tsp grated onion until tender.
  3. 3 Brown flour in butter. Thicken the cooking liquid with the browned butter-flour mixture and serve.
