Brown Butter Carrots

Ingredients

  • French carrots
  • 1 tbsp butter
  • 1 tbsp flour
  • Salt and pepper

Method

  1. 1 Wash, scrape, and boil the smallest French carrots in a small amount of water until tender.
  2. 2 Drain the carrots, reserving the cooking water for the sauce.
  3. 3 Melt butter in a pan, stir in flour, and cook until dark brown.
  4. 4 Gradually add the reserved carrot water, seasoning with salt and pepper, and simmer until thick and smooth.
  5. 5 Add the carrots to the sauce, heat through, and serve.
