Brown Butter Carrots
Ingredients
- French carrots
- 1 tbsp butter
- 1 tbsp flour
- Salt and pepper
Method
- 1 Wash, scrape, and boil the smallest French carrots in a small amount of water until tender.
- 2 Drain the carrots, reserving the cooking water for the sauce.
- 3 Melt butter in a pan, stir in flour, and cook until dark brown.
- 4 Gradually add the reserved carrot water, seasoning with salt and pepper, and simmer until thick and smooth.
- 5 Add the carrots to the sauce, heat through, and serve.
