Brown Butter Beef Shin Stew

Ingredients

  • 1 piece beef shin, bone-in
  • 1/2 cup flour
  • 1 large turnip, cut into quarters
  • 1 large carrot, cut into quarters
  • 1 bouquet of soup herbs
  • 1/2 teaspoon sweet marjoram
  • 2 cups boiling water

Method

  1. 1 Wipe the beef shin with a damp cloth and pat it with flour.
  2. 2 Brown the meat quickly on both sides in a deep saucepan.
  3. 3 Add turnip, carrot, soup herbs, marjoram, and boiling water.
  4. 4 Cover closely and cook slowly until tender, about 30 minutes plus 25 minutes per pound.
