Brown Butter Beef Shin Stew
Ingredients
- 1 piece beef shin, bone-in
- 1/2 cup flour
- 1 large turnip, cut into quarters
- 1 large carrot, cut into quarters
- 1 bouquet of soup herbs
- 1/2 teaspoon sweet marjoram
- 2 cups boiling water
Method
- 1 Wipe the beef shin with a damp cloth and pat it with flour.
- 2 Brown the meat quickly on both sides in a deep saucepan.
- 3 Add turnip, carrot, soup herbs, marjoram, and boiling water.
- 4 Cover closely and cook slowly until tender, about 30 minutes plus 25 minutes per pound.
