Brown Butter Baked Cod With Parsley

Ingredients

  • 1 lb cod fillet, boneless and skinless
  • 2 tbsp butter
  • Salt and pepper to taste
  • ¼ cup grated breadcrumbs
  • 1 tbsp chopped parsley

Method

  1. 1 Preheat oven to 350°F. Prepare the cod by ensuring all bones and skin are removed.
  2. 2 Melt butter in a saucepan over medium heat until it begins to brown slightly.
  3. 3 Add the cod to the pan, seasoning with salt and pepper. Sprinkle breadcrumbs over the top to thicken.
  4. 4 Heat gently for a few minutes, then transfer mixture into paper baking cups.
  5. 5 Top with chopped parsley and bake until heated through and golden.
