Brown Beef Gravy With Onions And Carrots

Ingredients

  • 2 lbs beef scraps (lean, no fat)
  • 5-6 onions, cut into small pieces
  • 5-6 carrots, cut into small pieces
  • 1 cup water
  • 1 tsp salt
  • 3-4 cloves
  • 1 bunch sweet herbs
  • Optional: pieces of cold goose or duck

Method

  1. 1 Place beef scraps, onions, and carrots in a saucepan or skillet.
  2. 2 Pour 1 cup water over the ingredients and cover the pan.
  3. 3 Cook over high heat until the mixture turns brown.
  4. 4 Add boiling water or broth, salt, cloves, and sweet herbs.
  5. 5 Reduce heat and simmer gently for 1.5 hours.
  6. 6 Occasionally press the meat with a spoon to extract juices.
  7. 7 Strain through a sieve and let stand before using.
