Brown Beef Gravy With Onions And Carrots
Ingredients
- 2 lbs beef scraps (lean, no fat)
- 5-6 onions, cut into small pieces
- 5-6 carrots, cut into small pieces
- 1 cup water
- 1 tsp salt
- 3-4 cloves
- 1 bunch sweet herbs
- Optional: pieces of cold goose or duck
Method
- 1 Place beef scraps, onions, and carrots in a saucepan or skillet.
- 2 Pour 1 cup water over the ingredients and cover the pan.
- 3 Cook over high heat until the mixture turns brown.
- 4 Add boiling water or broth, salt, cloves, and sweet herbs.
- 5 Reduce heat and simmer gently for 1.5 hours.
- 6 Occasionally press the meat with a spoon to extract juices.
- 7 Strain through a sieve and let stand before using.
