Brown Beef And Vegetable Stew
Ingredients
- 1 lb beef neck, cross ribs, shin, or knuckles
- 1 sliced onion
- 1/2 cup carrots
- 1/2 cup turnips
- 1 cup potatoes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup flour
- 1 quart water
- 3 tablespoons fat
Method
- 1 Cut half the meat into small pieces and soak in 1 quart of water for one hour. Heat slowly to boiling point.
- 2 Season the remaining half of the meat with salt and pepper, then roll in flour. Brown in fat with the sliced onion.
- 3 Add the browned meat and onion to the soaked meat. Cook for one hour or until the meat is tender.
- 4 Add carrots, turnips, and potatoes. Mix remaining flour with half cup of cold water and stir into the stew. Cook until vegetables are tender.
