Brown Beef And Ham Gravy

Ingredients

  • 2 slices ham or bacon, about ¼ inch thick
  • 2 lbs beef or veal
  • 1 carrot
  • 1 large onion
  • 4 cloves
  • 1 head celery
  • 1 bundle parsley
  • 1 sprig lemon-thyme
  • 1 sprig savory
  • Few leaves sweet basil
  • 1 bay leaf
  • 1 shallot
  • Piece of lemon peel
  • 12 allspice corns
  • ½ cup water
  • 3 cups boiling water

Method

  1. 1 Place ham or bacon and beef or veal in a stew-pan. Add carrot, onion studded with cloves, celery, parsley, lemon-thyme, savory, basil, bay leaf, shallot, lemon peel, and allspice.
  2. 2 Pour in ½ cup water. Cover tightly and simmer gently on low heat for 30 minutes until almost dry. Watch carefully to let it brown nicely.
  3. 3 Turn the meat and ingredients to brown on all sides. Add 3 cups boiling water and boil for 2 hours to create a rich gravy.
