Broiled Summer Squash With Basil And Cheese
Ingredients
- 2 tablespoons vegetable oil
- 1 medium summer squash, thinly sliced
- 1 tablespoon water
- Salt and pepper to taste
- 6 tablespoons fresh sweet basil
- Parmesan or Romano cheese, grated
Method
- 1 Heat 1 tablespoon of oil in a large ovenproof frying pan over medium-high heat.
- 2 Arrange the sliced squash in the pan. Add water, salt, pepper, and basil.
- 3 Cover and cook over medium heat for 5 minutes, or until the squash is tender-crisp.
- 4 Sprinkle with grated cheese and drizzle with the remaining oil. Broil until cheese melts and browns slightly.
