Broiled Summer Squash With Basil And Cheese

  • 2 tablespoons vegetable oil
  • 1 medium summer squash, thinly sliced
  • 1 tablespoon water
  • Salt and pepper to taste
  • 6 tablespoons fresh sweet basil
  • Parmesan or Romano cheese, grated

Method

  1. 1 Heat 1 tablespoon of oil in a large ovenproof frying pan over medium-high heat.
  2. 2 Arrange the sliced squash in the pan. Add water, salt, pepper, and basil.
  3. 3 Cover and cook over medium heat for 5 minutes, or until the squash is tender-crisp.
