Broiled Steak With Maîtred'hôtel Butter
Ingredients
- 1 beefsteak (1 to 1.75 inches thick)
- Salt and pepper
- Maître d'hôtel butter
- Lemon slices
- Watercress
Method
- 1 Trim the steak, removing excess fat and the end-piece. Smooth the surface by striking it with the broad blade of a knife.
- 2 Heat a broiler very hot. Grease the broiler well with a piece of trimmed fat held on a fork.
- 3 Place the steak on the broiler close to the hot coals. Sear for 10 seconds, then turn and sear the other side.
- 4 Move the steak farther from the coals to cook slowly. Turn every 10 seconds until done to desired doneness (rare to medium).
- 5 Sprinkle with salt and pepper. Spread with maître d'hôtel butter just before serving.
- 6 Garnish with lemon slices and watercress. Serve immediately.
