Broiled Spring Chicken With Herb Butter

Ingredients

  • young spring chickens
  • salt and pepper
  • soft butter
  • maître d'hôtel butter
  • parsley or watercress
  • thin slices of lemon

Method

  1. 1 Split chickens down the back, remove entrails and breast bone, and wipe clean.
  2. 2 Sprinkle with salt and pepper, then rub with soft butter.
  3. 3 Place on a broiler over a slow fire, inside down, and cover with a pan.
  4. 4 Cook for 20-25 minutes, turning to brown the skin side when nearly done.
  5. 5 Place on a hot dish, spread with maître d'hôtel butter, and garnish with parsley, watercress, and lemon slices.
