Broiled Spring Chicken With Herb Butter
Ingredients
- young spring chickens
- salt and pepper
- soft butter
- maître d'hôtel butter
- parsley or watercress
- thin slices of lemon
Method
- 1 Split chickens down the back, remove entrails and breast bone, and wipe clean.
- 2 Sprinkle with salt and pepper, then rub with soft butter.
- 3 Place on a broiler over a slow fire, inside down, and cover with a pan.
- 4 Cook for 20-25 minutes, turning to brown the skin side when nearly done.
- 5 Place on a hot dish, spread with maître d'hôtel butter, and garnish with parsley, watercress, and lemon slices.
