Method

  1. 1 Separate one side of the shad from the backbone so it lies open. Wash clean and dry thoroughly with a cloth.
  2. 2 Sprinkle salt and pepper over the fish. Let it stand until ready to broil.
  3. 3 Heat a gridiron until hot and grease it well. Broil the shad nicely.
  4. 4 Pour melted butter over the cooked fish and serve immediately.
