Broiled Shad Roe With Lemon Butter
Ingredients
- shad roe
- flour
- bacon fat
- 2 tablespoons butter
- 1 tablespoon lemon juice
- 1 tablespoon grated onion
- 1 tablespoon finely chopped onion
- 1 teaspoon salt
Method
- 1 Wipe the shad roe and parboil for five minutes.
- 2 Wipe dry, dust lightly with flour, and brush with bacon fat.
- 3 Broil for ten minutes until cooked through.
- 4 Transfer to a hot platter.
- 5 Whisk butter, lemon juice, grated onion, chopped onion, and salt; spread over the roe.
