Broiled Salt Cod With Lemon Butter
Ingredients
- Salt mackerel (salt cod)
- Water
- Salad oil
- Vinegar or lemon juice
- Butter
- Lemon juice
- Minced parsley
Method
- 1 Wash and scrape the fish. Soak overnight in cold water, changing the water to tepid at bedtime and scalding hot early the next morning. Keep hot for one hour on the side of the range.
- 2 Wash in cold water with a stiff brush, wipe perfectly dry, and rub all over with salad oil and vinegar or lemon juice. Let sit in this mixture for 15 minutes.
- 3 Broil the fish. Serve on a hot dish topped with a mixture of butter, lemon juice, and minced parsley.
