Broiled Salmon With Oyster Sauce
Ingredients
- 1 whole salmon, sliced into 1-inch thick pieces
- Wine vinegar
- Sweet salad oil
- Salt
- Fresh rosemary sprigs
- Fresh sweet marjoram
- Fresh thyme
- Fresh parsley
- Gravy
- Oyster liquor
Method
- 1 Steep salmon slices in a mixture of wine vinegar, sweet salad oil, and salt.
- 2 Broil the fish over a soft fire, basting frequently with the steeping liquid and fresh herb sprigs.
- 3 Simmer the remaining gravy and oyster liquor to create a sauce.
- 4 Plate the fish, pour the hot sauce over it, and garnish with the cooked herbs.
