Broiled Planked Shad With Butter
Ingredients
- 1 shad, split for broiling
- 1 tablespoon drippings (or hardwood plank)
- butter
- salt
- pepper
- lemon quarters
Method
- 1 Split the shad as for broiling and place it skin-side down on a seasoned hardwood board.
- 2 Fasten the fish to the board with tacks and heat the board before placing the shad on it.
- 3 Roast the shad before the fire, rubbing it occasionally with butter until done.
- 4 Alternatively, heat drippings in a baking pan, place the shad skin-side up under coals.
- 5 Cook until the skin is puffed and blistered, then turn onto a hot dish.
- 6 Dredge with salt and pepper, cover with butter, and serve with lemon quarters.
