Broiled Pike With Lemon Butter

Ingredients

  • 1 whole pike, split and scored
  • Salt to taste
  • Butter for basting
  • Butter for serving
  • Juice of lemons or white wine vinegar
  • Slices of oranges or lemons for garnish

Method

  1. 1 Split the pike and score the outside with a knife. Season generously with salt.
  2. 2 Heat a gridiron over a clear fire until very hot. Place the pike on the gridiron.
  3. 3 Baste frequently with butter and turn often until the fish is broiled crisp and stiff.
  4. 4 Transfer to a serving dish. Serve with melted butter and lemon juice or white wine vinegar.
  5. 5 Garnish the dish with slices of oranges or lemons.
