Broiled Pike With Lemon Butter
Ingredients
- 1 whole pike, split and scored
- Salt to taste
- Butter for basting
- Butter for serving
- Juice of lemons or white wine vinegar
- Slices of oranges or lemons for garnish
Method
- 1 Split the pike and score the outside with a knife. Season generously with salt.
- 2 Heat a gridiron over a clear fire until very hot. Place the pike on the gridiron.
- 3 Baste frequently with butter and turn often until the fish is broiled crisp and stiff.
- 4 Transfer to a serving dish. Serve with melted butter and lemon juice or white wine vinegar.
- 5 Garnish the dish with slices of oranges or lemons.
