Broiled Parmesan Summer Squash

Ingredients

  • 2 tablespoons vegetable oil, divided
  • 1 medium summer squash, thinly sliced
  • 1 tablespoon water
  • Salt and pepper to taste
  • 1 tablespoon fresh basil, chopped
  • 6 tablespoons Parmesan or Romano cheese, grated

Method

  1. 1 Heat 1 tablespoon oil in a large oven-proof skillet over medium-high heat.
  2. 2 Add sliced squash, water, salt, pepper, and basil. Cover and cook for 5 minutes until tender-crisp.
  3. 3 Sprinkle with cheese and drizzle with remaining oil. Broil until cheese melts and browns slightly.
