Broiled Parmesan Summer Squash
Ingredients
- 2 tablespoons vegetable oil, divided
- 1 medium summer squash, thinly sliced
- 1 tablespoon water
- Salt and pepper to taste
- 1 tablespoon fresh basil, chopped
- 6 tablespoons Parmesan or Romano cheese, grated
Method
- 1 Heat 1 tablespoon oil in a large oven-proof skillet over medium-high heat.
- 2 Add sliced squash, water, salt, pepper, and basil. Cover and cook for 5 minutes until tender-crisp.
- 3 Sprinkle with cheese and drizzle with remaining oil. Broil until cheese melts and browns slightly.
