Broiled Oysters With Cracker Crumbs

Ingredients

  • 1 pint selected oysters
  • ¼ cup melted butter
  • 2/3 cup seasoned cracker crumbs
  • Salt and pepper to taste

Method

  1. 1 Clean the oysters and pat them dry between towels.
  2. 2 Lift each oyster by the tough muscle with a fork, dip it in melted butter, then coat in seasoned cracker crumbs.
  3. 3 Place oysters in a buttered wire broiler and broil over a clear fire, turning occasionally until juices flow.
  4. 4 Serve immediately with or without Maître d'Hôtel Butter.
