Broiled Mutton Chops With Butter
Ingredients
- mutton loin or breast chops, 1¼ inches thick
- salt
- pepper
- butter
Method
- 1 Trim excess fat from loin chops or wrap thin end pieces around them and secure with a skewer to form a circle. Ensure all chops are uniform in size.
- 2 Broil chops over or under hot coals, turning the broiler every 10 seconds. Cook for 8-10 minutes until the meat offers slight resistance and looks puffy.
- 3 Remove from heat, sprinkle with salt and pepper, and dot with butter. Arrange overlapping in a circle on a hot dish.
