Broiled Mushrooms With Cream Sauce
Ingredients
- large flap mushrooms
- salt and pepper
- olive oil
- mushroom stems and skins
- water
- 2-3 mushrooms, minced
- 1 tsp minced parsley
- onion juice
- 1 small lump of butter
- 1 cup cream
- 1 tsp flour
- 1 egg yolk, beaten
Method
- 1 Wash, skin, and stem mushrooms. Place on a dish, sprinkle with salt, pepper, and olive oil. Let stand for one hour.
- 2 Broil mushrooms on a gridiron over a clear fire until cooked through. Transfer to a serving dish.
- 3 Boil reserved stems and skins in water, then strain to create a stock.
- 4 In the stock, add minced mushrooms, parsley, onion juice, and butter. Cook for 15 minutes.
- 5 Stir in cream and flour mixture. Cook for 3 minutes, then remove from heat and stir in beaten egg yolk. Serve over mushrooms.
