  • mushrooms, cleaned and peeled
  • melted butter
  • bacon fat (optional)
  • lemon juice
  • cold salted water (for soaking)

Method

  1. 1 If mushrooms are strongly flavored, soak in cold salted water for a few minutes, then drain.
  2. 2 Dip mushrooms in melted butter and place on ice for 15 minutes.
