- salt

- oil or butter
- melted butter
- parsley
- lemon juice or vinegar
Method
- 1 Split the mackerel down the back and season with salt and pepper.
- 2 Cover the fish with oil or butter and let it rest for at least 30 minutes.
- 3 Broil the fish, basting with the remaining seasoning from the dish.
- 4 Prepare a sauce by mixing melted butter with parsley and lemon juice or vinegar.
