Broiled Mackerel With Mint And Fennel
Ingredients
- mackerel
- salt
- mint
- green fennel
- butter
- oil
- vinegar
- rosemary
- thyme
- parsley
- lemon slices
- orange slices
Method
- 1 Draw, wash, and dry the mackerel. Season with salt.
- 2 Place on a soft fire to broil. Add mint and green fennel during cooking.
- 3 Baste frequently with butter or a mixture of oil and vinegar until finely broiled.
- 4 Serve with beaten butter and vinegar, or oil and vinegar, garnished with rosemary, thyme, parsley, and slices of lemon or orange.
