Broiled Lobster With Chili Sauce

  • 1 live lobster
  • salad oil
  • melted butter
  • chili sauce
  • tomato sauce

Method

  1. 1 Split the live lobster in half lengthwise, laying it on its back without cutting through the back shell.
  2. 2 Remove the entrails and the vein running through the tail, then wash the lobster well.
  3. 3 Brush the lobster with salad oil, place it shell-side up in a broiler, and cook for 15 minutes.
  4. 4 Turn the lobster flesh-side up, baste with salad oil or melted butter, and cook for 12 minutes.
  5. 5 Remove from heat and serve immediately with melted butter, chili sauce, or tomato sauce.
