Broiled Ham And Fried Eggs
Ingredients
- thinly sliced ham
- water (for desalting, if needed)
- salt pork
- eggs
Method
- 1 If the ham is very salty, soak it in boiling water for a few minutes, then dry it thoroughly.
- 2 Render salt pork in a frying pan until fat is released.
- 3 Broil the ham slices over hot coals or in a broiler for 3-4 minutes until heated through.
- 4 Fry eggs in the rendered pork fat, basting the tops with fat until edges are browned but not burnt.
- 5 Serve the fried eggs arranged around the broiled ham slices.
