  • fish (small or large)
  • melted shortening
  • 2 tablespoons butter
  • 2 tablespoons parsley, chopped
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • lemon slices for garnish
  • parsley sprigs for garnish

Method

  1. 1 Cleanse the fish. Leave small fish whole and split large fish.
  2. 2 Brush the fish with melted shortening.
  3. 3 Broil small fish for 10 minutes. Broil large fish for 30-45 minutes (10 minutes per pound).
  4. 4 Mix butter, chopped parsley, Worcestershire sauce, and lemon juice.
  5. 5 Transfer fish to a hot platter, spread with the butter mixture, and garnish with lemon slices and parsley.
