Broiled Fish With Maître D'Hôtel Sauce

  • fish (shad, bluefish, or mackerel)
  • oil or butter
  • flour (optional)
  • salt pork (for greasing broiler)
  • butter
  • salt
  • pepper
  • maître d'hôtel sauce (optional)
  • watercress (for garnish)
  • lemon (for garnish)

Method

  1. 1 Split the fish down the back, wash, and dry thoroughly.
  2. 2 Rub the fish with oil or butter, or flour the skin to prevent sticking.
  3. 3 Heat the broiler until hot and grease it with a piece of salt pork.
  4. 4 Place fish on the broiler. Cook over clear, hot fire, turning frequently.
  5. 5 If needed, move broiler to a pan in the oven to finish cooking without burning.
  6. 6 Transfer to a hot dish, spread with butter, salt, and pepper, or maître d'hôtel sauce.
