Broiled Fish With Maître D'Hôtel Sauce
Ingredients
- fish (shad, bluefish, or mackerel)
- oil or butter
- flour (optional)
- salt pork (for greasing broiler)
- butter
- salt
- pepper
- maître d'hôtel sauce (optional)
- watercress (for garnish)
- lemon (for garnish)
Method
- 1 Split the fish down the back, wash, and dry thoroughly.
- 2 Rub the fish with oil or butter, or flour the skin to prevent sticking.
- 3 Heat the broiler until hot and grease it with a piece of salt pork.
- 4 Place fish on the broiler. Cook over clear, hot fire, turning frequently.
- 5 If needed, move broiler to a pan in the oven to finish cooking without burning.
- 6 Transfer to a hot dish, spread with butter, salt, and pepper, or maître d'hôtel sauce.
