Broiled Fish With Bacon Tomato Peppers

Ingredients

  • Sea trout, striped bass, or other fish
  • Salad oil
  • 4 onions, chopped fine
  • 3 large tomatoes, chopped fine
  • 2 green peppers, chopped fine
  • 2 ounces salt pork or fat bacon, chopped fine
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • Juice of 1/2 lemon

Method

  1. 1 Clean and bone the fish. Place in a baking dish and spread freely with salad oil.
  2. 2 Broil for 12 minutes in a gas broiler or bake for 15 minutes in a hot oven (425°F).
  3. 3 Chop salt pork or bacon fine and cook in a skillet until nicely browned.
  4. 4 Add chopped onions, tomatoes, and green peppers; cook slowly until vegetables are soft.
  5. 5 Season with sugar, salt, white pepper, and lemon juice. Mix thoroughly and serve with the fish.
