Broiled Fish With Bacon Tomato Peppers
Ingredients
- Sea trout, striped bass, or other fish
- Salad oil
- 4 onions, chopped fine
- 3 large tomatoes, chopped fine
- 2 green peppers, chopped fine
- 2 ounces salt pork or fat bacon, chopped fine
- 1/2 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- Juice of 1/2 lemon
Method
- 1 Clean and bone the fish. Place in a baking dish and spread freely with salad oil.
- 2 Broil for 12 minutes in a gas broiler or bake for 15 minutes in a hot oven (425°F).
- 3 Chop salt pork or bacon fine and cook in a skillet until nicely browned.
- 4 Add chopped onions, tomatoes, and green peppers; cook slowly until vegetables are soft.
- 5 Season with sugar, salt, white pepper, and lemon juice. Mix thoroughly and serve with the fish.
