Broiled Crab And Parmesan Toast
Ingredients
- 1 cup boiled crab meat (from 6 crabs)
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons white wine
- 1 tablespoon butter
- 1 tablespoon flour
- ½ cup stock
- ½ cup cream or milk
- ½ teaspoon salt
- ¼ teaspoon pepper
- Dash of cayenne
- Buttered toast cut into squares or circles
- Grated Parmesan cheese for sprinkling
- Small bits of butter
- Parsley for garnish
Method
- 1 Melt 1 tablespoon butter in a saucepan. Add flour and cook without browning.
- 2 Slowly add stock, stirring until smooth. Add cream and simmer until thickened.
- 3 Stir in salt, pepper, cayenne, crab meat, and 2 tablespoons Parmesan cheese.
- 4 Add wine and simmer for a few minutes.
- 5 Spread mixture over buttered toast squares. Sprinkle with Parmesan and top with small bits of butter.
- 6 Broil or bake for 3 minutes until hot. Serve on a napkin garnished with parsley.
