Broiled Chicken With Bacon

Ingredients

  • 1 plump broiler chicken
  • 1 cup water
  • shortening
  • flour
  • melted butter
  • bacon strips

Method

  1. 1 Singe the chicken, split it down the back, draw the entrails, and wash well. Remove the breast bone.
  2. 2 Place the chicken split-side down in a frying pan with 1 cup of water. Cover closely and steam for 10 minutes.
  3. 3 Rub the chicken well with shortening and dust very lightly with flour.
  4. 4 Broil for 20 minutes, turning every 4 minutes. Transfer to a hot platter, brush with melted butter, and garnish with bacon.
