Broiled Chicken With Bacon
Ingredients
- 1 plump broiler chicken
- 1 cup water
- shortening
- flour
- melted butter
- bacon strips
Method
- 1 Singe the chicken, split it down the back, draw the entrails, and wash well. Remove the breast bone.
- 2 Place the chicken split-side down in a frying pan with 1 cup of water. Cover closely and steam for 10 minutes.
- 3 Rub the chicken well with shortening and dust very lightly with flour.
- 4 Broil for 20 minutes, turning every 4 minutes. Transfer to a hot platter, brush with melted butter, and garnish with bacon.
