Breaded Stuffed Flounder Fillets
Ingredients
- 2½ lb flounder fillets
- Salt and pepper
- 1 cup mashed potato
- 1 egg yolk, beaten
- 1 tbsp butter
- ¼ tsp salt
- Breadcrumbs
- 1 egg white, beaten
- 2 tbsp water
- Macaroni tubes
- Deep fat for frying
Method
- 1 Season flounder fillets with salt, pepper, and onion juice if desired.
- 2 Mix mashed potato, beaten egg yolk, butter, salt, and pepper. Spread mixture on one half of each fillet.
- 3 Fold the other half of the fillet over the filling. Dip in egg white mixed with water, then coat thoroughly with breadcrumbs.
- 4 Fry in deep fat until golden brown. Drain on paper towels.
- 5 Insert a short piece of macaroni into the pointed end of each fillet. Garnish and serve with tomato sauce.
