Breaded Stuffed Flounder Fillets

Ingredients

  • 2½ lb flounder fillets
  • Salt and pepper
  • 1 cup mashed potato
  • 1 egg yolk, beaten
  • 1 tbsp butter
  • ¼ tsp salt
  • Breadcrumbs
  • 1 egg white, beaten
  • 2 tbsp water
  • Macaroni tubes
  • Deep fat for frying

Method

  1. 1 Season flounder fillets with salt, pepper, and onion juice if desired.
  2. 2 Mix mashed potato, beaten egg yolk, butter, salt, and pepper. Spread mixture on one half of each fillet.
  3. 3 Fold the other half of the fillet over the filling. Dip in egg white mixed with water, then coat thoroughly with breadcrumbs.
  4. 4 Fry in deep fat until golden brown. Drain on paper towels.
  5. 5 Insert a short piece of macaroni into the pointed end of each fillet. Garnish and serve with tomato sauce.
