Breaded Sautéed Sole Fillets
Ingredients
- sole fillets, dried and cut into 2-3 inch pieces
- 1 egg yolk, beaten
- seasoned bread crumbs
- butter
Method
- 1 Dry the sole fillets and divide them into neat pieces 2-3 inches long.
- 2 Dip the fish pieces in beaten egg yolk, then coat thoroughly in seasoned bread crumbs.
- 3 Heat butter in a frying pan over medium heat. Add the fillets and cook slowly until browned on one side.
- 4 Turn the fillets and finish cooking on the other side until done.
