Ingredients

  • sole fillets, dried and cut into 2-3 inch pieces
  • 1 egg yolk, beaten
  • seasoned bread crumbs
  • butter

Method

  1. 1 Dry the sole fillets and divide them into neat pieces 2-3 inches long.
  2. 2 Dip the fish pieces in beaten egg yolk, then coat thoroughly in seasoned bread crumbs.
  3. 3 Heat butter in a frying pan over medium heat. Add the fillets and cook slowly until browned on one side.
  4. 4 Turn the fillets and finish cooking on the other side until done.
