Breaded Sautéed Eggplant Slices

Ingredients

  • 1 medium eggplant
  • salt
  • 1 egg
  • 2 tbsp milk or water
  • breadcrumbs
  • fat for frying

Method

  1. 1 Peel the eggplant and cut into 1/4-inch slices. Sprinkle with salt and let stand for 1 hour or more to draw out moisture.
  2. 2 Pour off collected juice. Beat the egg with milk or water. Dip slices into the egg mixture, then coat thoroughly in breadcrumbs.
  3. 3 Sauté in shallow fat, browning first on one side and then the other until golden. Serve hot.
