Breaded Sautéed Eggplant Slices
Ingredients
- 1 medium eggplant
- salt
- 1 egg
- 2 tbsp milk or water
- breadcrumbs
- fat for frying
Method
- 1 Peel the eggplant and cut into 1/4-inch slices. Sprinkle with salt and let stand for 1 hour or more to draw out moisture.
- 2 Pour off collected juice. Beat the egg with milk or water. Dip slices into the egg mixture, then coat thoroughly in breadcrumbs.
- 3 Sauté in shallow fat, browning first on one side and then the other until golden. Serve hot.
