Breaded Sage And Parsley Scotch Eggs
Ingredients
- 5 hard-boiled eggs
- 3/4 cup breadcrumbs
- 1 Spanish onion
- 1 tsp powdered sage
- 2 tsp finely chopped parsley
- 1 egg
- 1 oz butter
- pepper and salt to taste
- oil or butter for frying
Method
- 1 Grate the onion and melt the butter in a pan.
- 2 Beat the egg and mix with breadcrumbs, sage, parsley, onion, butter, salt, and pepper to form a smooth forcemeat.
- 3 Shell the hard-boiled eggs and cover each completely with a thick layer of the forcemeat.
- 4 Fry the coated eggs in oil or butter until golden brown.
- 5 Serve hot with brown gravy.
