Ingredients

  • 5 hard-boiled eggs
  • 3/4 cup breadcrumbs
  • 1 Spanish onion
  • 1 tsp powdered sage
  • 2 tsp finely chopped parsley
  • 1 egg
  • 1 oz butter
  • pepper and salt to taste
  • oil or butter for frying

Method

  1. 1 Grate the onion and melt the butter in a pan.
  2. 2 Beat the egg and mix with breadcrumbs, sage, parsley, onion, butter, salt, and pepper to form a smooth forcemeat.
  3. 3 Shell the hard-boiled eggs and cover each completely with a thick layer of the forcemeat.
  4. 4 Fry the coated eggs in oil or butter until golden brown.
  5. 5 Serve hot with brown gravy.
