Breaded Potato Sausages

Ingredients

• 1 pint mashed potato
• 2 eggs, well beaten
• ¾ cup breadcrumbs
• 2 oz butter or Allinson nut-oil
• 1/8 tsp nutmeg
• pepper and salt

Method

1. 1 Mash the potatoes well with one of the eggs and add seasoning.
2. 2 Form the mixture into sausage shapes.
3. 3 Roll the sausages in the remaining beaten egg and then in breadcrumbs.
4. 4 Fry them in butter or oil until brown.
