Breaded Pork Tenderloin Fillets

Ingredients

  • 1.5 lbs pork tenderloin
  • 1 small onion, minced
  • 3 tbsp lemon juice
  • 2 tbsp salad oil
  • 1 tsp salt
  • 1 tsp paprika
  • Flour for dredging
  • 1 egg, beaten
  • Fine bread crumbs

Method

  1. 1 Cut pork tenderloin into 8 fillets. Place in a dish and baste with a mixture of minced onion, lemon juice, salad oil, salt, and paprika. Marinate.
  2. 2 Lift fillets from marinade, roll lightly in flour, dip in beaten egg, then coat with fine bread crumbs.
  3. 3 Fry in hot fat until golden brown and cooked through.
