Ingredients

  • 1 young pigeon
  • 2 tbsp butter
  • 1 egg, beaten
  • salt and pepper
  • bread crumbs, finely ground

Method

  1. 1 Split the pigeon lengthwise and flatten it with your hands.
  2. 2 Brown the pigeon in oil for 4-5 minutes to harden the meat, then season with salt and pepper while hot.
  3. 3 Melt butter without boiling, mix with the beaten egg, and dip the pigeon to coat.
  4. 4 Sprinkle the coated pigeon with fine bread crumbs.
  5. 5 Grill over low heat and serve with a sauce or side dish.
