Breaded Grilled Pigeon
Ingredients
- 1 young pigeon
- 2 tbsp butter
- 1 egg, beaten
- salt and pepper
- bread crumbs, finely ground
Method
- 1 Split the pigeon lengthwise and flatten it with your hands.
- 2 Brown the pigeon in oil for 4-5 minutes to harden the meat, then season with salt and pepper while hot.
- 3 Melt butter without boiling, mix with the beaten egg, and dip the pigeon to coat.
- 4 Sprinkle the coated pigeon with fine bread crumbs.
- 5 Grill over low heat and serve with a sauce or side dish.
