Breaded Grilled Lamb With Mushroom Ketchup Sauce

Ingredients

  • 1 shoulder of lamb
  • 1 egg yolk
  • Salt and pepper to taste
  • Breadcrumbs
  • Dried parsley or sweet herbs
  • 1 oz fresh butter
  • 1 tbsp mushroom or walnut ketchup
  • Juice of half a lemon

Method

  1. 1 Boil the lamb shoulder until tender, then score the surface in a checkerboard pattern about one inch square.
  2. 2 Rub the meat with egg yolk, then season with salt and pepper. Strew with breadcrumbs and dried parsley or sweet herbs.
  3. 3 Grill or broil over a clear fire until a nice light brown, or bake in a Dutch oven until browned.
  4. 4 For sauce, mix flour and water, then stir in fresh butter, ketchup, and lemon juice. Heat until thickened and serve with the lamb.
