Breaded Fried Stuffed Eggs
Ingredients
- hard-boiled eggs
- minced chicken or other meat
- pepper
- salt
- sauce or gravy
- raw egg
- chopped truffles (optional)
- chopped mushrooms (optional)
- egg for washing
- breadcrumbs
- hot fat for frying
Method
- 1 Cut hard-boiled eggs in half lengthwise and remove the yolks.
- 2 Mash yolks and mix with minced meat, pepper, salt, a little sauce or gravy, and a raw egg. Add chopped truffles or mushrooms if desired.
- 3 Fill the egg white halves with the mixture, smoothing it even with the top.
- 4 Brush the stuffed eggs with beaten egg, press two halves together, then roll in egg and breadcrumbs.
- 5 Fry in hot fat until golden brown. Serve on a napkin with white, Béchamel, tomato, or other sauce.
