Breaded Fried Spring Chicken

Ingredients

  • 1 spring chicken
  • flour
  • salt
  • pepper
  • 2 whole eggs, beaten
  • bread crumbs
  • oil or fat for frying
  • lemon wedges

Method

  1. 1 Wash the spring chicken and blanch in boiling water for one minute.
  2. 2 Cut the chicken into pieces at the joints.
  3. 3 Roll pieces in flour, season with salt and pepper, then dip in beaten eggs.
  4. 4 Roll the chicken in bread crumbs. Repeat the egg and breadcrumb coating if necessary.
  5. 5 Fry in hot oil or fat over low heat until well browned on both sides.
  6. 6 Serve hot with lemon wedges.
