Breaded Fried Spring Chicken
Ingredients
- 1 spring chicken
- flour
- salt
- pepper
- 2 whole eggs, beaten
- bread crumbs
- oil or fat for frying
- lemon wedges
Method
- 1 Wash the spring chicken and blanch in boiling water for one minute.
- 2 Cut the chicken into pieces at the joints.
- 3 Roll pieces in flour, season with salt and pepper, then dip in beaten eggs.
- 4 Roll the chicken in bread crumbs. Repeat the egg and breadcrumb coating if necessary.
- 5 Fry in hot oil or fat over low heat until well browned on both sides.
- 6 Serve hot with lemon wedges.
