Breaded Fried Scallops

Ingredients

  • 1 quart scallops
  • Salt and pepper to taste
  • Fine breadcrumbs
  • 1 egg, beaten
  • Deep fat for frying

Method

  1. 1 Clean the scallops and place them in a saucepan. Cook until they begin to shrivel, then drain and dry thoroughly between paper towels.
  2. 2 Season the scallops with salt and pepper. Roll them in fine breadcrumbs, dip them in the beaten egg, and roll them in breadcrumbs again.
  3. 3 Fry the scallops in deep fat for two minutes until golden. Remove and drain on brown paper before serving.
