Breaded Fried Scallops
Ingredients
- 1 quart scallops
- Salt and pepper to taste
- Fine breadcrumbs
- 1 egg, beaten
- Deep fat for frying
Method
- 1 Clean the scallops and place them in a saucepan. Cook until they begin to shrivel, then drain and dry thoroughly between paper towels.
- 2 Season the scallops with salt and pepper. Roll them in fine breadcrumbs, dip them in the beaten egg, and roll them in breadcrumbs again.
- 3 Fry the scallops in deep fat for two minutes until golden. Remove and drain on brown paper before serving.
